Fresh Farm Cheese!
Farm fresh cheese made right here on the Triple H Homestead. We offer a variety of hard cheese to please the most discerning palate! From our Farmhouse Cheddar, Creamy Colby and Golden Gouda to English favourites such as Leicester, Cotswold, Derbyshire & Port Wine Cheddar.
Our fresh milk comes from two cows; Lass, a Brown Swiss/Jersey cross and her daughter Heidi who is 1/4 Brown Swiss and 3/4 Jersey! Brown Swiss are noted for being “great cheese” cows due to the high protein content of their milk. Jerseys, known for being heavy, rich cream producers give us a lovely deep cream line on the milk… a perfect combination for our Creamy Colby’s and other rich varieties.
Making cheese is a passion for me. In late winter through early spring, this is a twice to three times a week endevour. Our wheels average around four to five pounds and last year over fifty wheels were made. This year the goal is to make upwards of seventy wheels!
Our girls are naturally fed, never any “additives”, antibiotics or hormones used… just good milk which in turn makes good cheese from good happy cows!
All cheese is made from raw cow’s milk, no colour added, waxed and aged a minimum of 90 days.
